Any vegetables you have will be perfect but some of our favourites are:
- Potatoes
- Carrots
- Cauliflower
- Cabbage
- Celery
- Onion
Other items:
- A tin of chopped tomatoes
- 1 Garlic clove (to your taste)
- 600ml Vegetable stock
- 1tsp of oil/butter (your choice)
Hearty vegetable soup
We know that it is difficult to use all your vegetables up before they start browning, therefore we have the perfect vegetable soup for you to make in bulk to make the most of those veggies!
Method:
- Chop/ slice or dice all of the vegetables to the size you prefer. We like ours to be quite chunky but if you would prefer a smoother soup, try slicing your vegetables really thin/small.
- Heat a teaspoon of oil in a pan and add the onion and carrot. Sweat the vegetables and garlic for approximately 3 minutes or until the onions begin to brown.
- Add the rest of the vegetables, the vegetable stock and chopped tomatoes and simmer for approximately 30 minutes or until you are happy with the taste.
- Serve in your favourite soup bowl to get the most enjoyment out of your lunch! We recommend a lovely fresh slice of bread to accompany too but of course that is entirely up to you.
This recipe is perfect to make a bulk amount of soup and lasts for around 3 days in the fridge. You can also freeze this soup for a rainy day too!
